So I finally tried these cake pops that I've been dying to make...They were a little bit of work, but fun!
The Recipe is on the website www.bakerella.com
Cake Mix (make as directed)
Tub of cream cheese
Lollipop sticks (long or short, I bought mine at Michaels)
Candy Melts (These are vanilla flavored chips, they come in any color and work really well)
or
Chocolate or white chocolate chips
What you do is make a cake (chocolate, yellow, carrot, red velvet) Whatever kind you like, and bake as directed in 9X 13 pan. After its cooled, mix it up so it's all crumbs and then mix in one container of store-bought CREAM CHEESE frosting. (I used the 'whipped' version). I used my hand mixer to do all the mixing. So it comes out like goo. Then scoop little 1 inch balls onto a jelly roll pan with wax paper on it. Freeze them (I did it overnight, but you could just do it for a couple hours). Just so the are firm.
Then take about 5 or so out of the freezer at a time, and you are ready to dip! Melt down chocolate chips, white chocolate chips, or Candy Melts. Melt VERY SLOWLY so it doesn't burn.
Once smooth, dip your lollipop stick in the CHOCOLATE FIRST, then push the cake ball onto the stick and dip in the chocolate again to completely coat.
Tap off extra and put aside to set up.
*If you are adding sprinkles, you have to wait til the chocolate is cooled a little bit so they don't melt, BUT you have to sprinkle them BEFORE it hardens all the way...this was something I struggled with. :)
